Mediterranean Pasta Salad

20-Minute Plant-Based Mediterranean Pasta Salad



Here's a great way to eat your veggies. This salad is full of flavor, crunch, and nutrition. Its a good source of plant protein, which helps to build muscle.



This makes a large amount of pasta salad, which makes it a perfect recipe to bring to a potluck or dinner party. You can make the recipe and save it to enjoy the whole week.









One of the ingredients that brings delicious flavor is the plant-based feta cheese. You can make your own or now but it in the stores. I found mine at Sprouts Farmers Market, and I'm sure they carry it in many stores nowadays. I used the Violife Feta, and it has good ingredients and great flavor.



 

Pasta Salad Ingredients

  • Pasta Bow Ties (8 oz)

  • 1 cucumber, diced

  • 1/2 red onion, diced

  • 3 tomatoes, diced

  • 1/2 cup kalamata olives, sliced

  • 1 can (15 oz.) chickpeas, drained

  • 1 can (15 oz.) artichoke hearts, drained and chopped

  • 1/4 cup dairy-free feta, crumbled

  • 1/4 cup parsley, chopped

Dressing Ingredients:

  • 1/4 cup olive oil

  • 6 tablespoons lemon juice, fresh

  • 1 garlic, minced well

  • 1/2 teaspoon oregano

  • 3/4 teaspoon salt

Directions:

  1. Make the pasta according to the directions on the package. Drain and place in a large bowl, and let it cool.

  2. Add all of the ingredients of the dressing into a bowl or jar with lid, and whisk together until well combined.

  3. Place the rest of the ingredients into the cooled pasta bowl and mix it all around.

  4. Add the dressing and toss it to coat the entire salad.

  5. Serve chilled.


 




It's even approved by this cute little girl.

I don't care for the taste of feta cheese. Is there something else I can use instead of it? If not, I will just leave it off.

You are so sweet, I'm glad to hear that. You can absolutely leave it off or add some nutritional yeast flakes to add a nice little flavor. It won't make it a mediterranean feel, but still delicious.
