Green Goddess Dressing & Salad

It's always good to have a variety of salads that you enjoy eating, and if you're looking for a new one, add this one. Besidesthe amazing flavors of this dressing and salad, it is full of nutrieints that are helpful to the body.


Fiber:

Each day we should be getting 25+ grams of fiber throughout the say, but most Americans are lucky to get 10 grams a dayon the standard American diet. This recipe alone will give you 8 grams of fiber, which is a good addition to the day.


Protein:

Even while eating a plant-based diet we can get plenty of protein that our body needs. This salad has 12 grams of protein. For the day having 50-80 grams of protein a day is ideal for most men and women.


Calories:

If you're needing to cut back on calories this salad only has 270 calories for the entire salad, not including the dressing. The dressing is about 60-70 calories per tablespoon.


So here you have a high nutrient low calorie meal that tastes great and can help you lose weight.




Dressing:

Ingredients:

1 cup tahini

2 green onions, including white and green part

1 cup basil, fresh

2 lemons, juice

1 teaspoon salt

3/4 cup water


Directions: 1. Add all ingredients to a blender, and blend until smooth.


Salad:

Ingredients:

1 bunch kale

1 cup arugula

1 cup purple cabbage, shredded

1 cucumber, chopped

1 cup cooked quinoa


Directions:

  1. Chop and prep all the vegtables.

  2. Add to a large bowl.

  3. Add a few tablespoons of dressings, and mix well.

  4. Eat chilled and enjoy.
